Pineapple Rice Pudding

I've been really trying hard lately to lower our grocery and household bills - thanks to a swift kick of inspiration from my MOPS group a month or two ago.

Having a diet that requires special needs makes it a bit hard, but not impossible.

I was stoked and just a bit smug the other day when I made up this recipe based on an old favourite my mum used to make. It's got the combined warm, comforting texture of a rice pudding, but also a tropical, summery taste with the pineapple and coconut. Furthermore, I can eat it even with my dairy/gluten intolerance! But best of all, it's SO quick and easy to make! Perfect for a busy mumma........

So I'm happy to share it with you, a fellow busy mumma. I hope you enjoy it!

Pineapple Rice Pudding

Ingredients (all approximate!):
4-5 cups cooked rice
400mL tin coconut milk or cream
3 heaped tbsp brown sugar
Large tin of pineapple pieces or to taste
Marshmallows (optional)

Simmer vanilla, coconut milk/cream and brown sugar in saucepan over low heat. Then combine all ingredients except marshmallows in a large bowl, then add to large serving dish (or small if you want to make individual puddings). Push marshmallows in the top of the pudding. If they melt slightly, that makes them yummier! Cool slightly and serve warm OR cool a lot and place in fridge to serve later on cold. Delicious either way!

The pudding tastes great with or without marshmallows.

  1. Yum that does sound good. My kids would like it too. Thanks.

  2. I searched for a rice pudding with pineapple, and this one looks really good and easy. Amazingly, I have all the ingredients.

How much vanilla and how long to simmer? I can wing it, but approximate amount and time would be greatly appreciated.
